Ingredients


For The Dough
200 gms whole wheat flour (gehun ka atta)
1 1/2 tsp carom seeds (ajwain)
2 tbsp chopped coriander (dhania)
2 tbsp chopped mint leaves (phudina)
1 tsp salt
2 tsp oil

For The Stuffing
1 tbsp oil
1 tbsp chopped green chillies
1 tbsp chopped ginger (adrak)
1 tsp chilli powder
1/2 tsp turmeric powder (haldi)
1/4 tsp coriander (dhania) powder
1/2 tsp garam masala
salt to taste
1 onion , chopped
400 gms potatoes , boiled , peeled and mashed
1 tsp lemon juice

Other Ingredients
butter for cooking
curd for serving


Method 
For the dough


  1. Combine all the ingredients in a bowl, mix well and knead into a soft dough, using enough water.
  2. Divide the dough into 4 equal portions, cover and keep aside.

For the stuffing


  1. Heat the oil in a broad pan, add the onions and green chillies and saute till onions turn golden brown in colour.
  2. Add the remaining ingredients and saute for 3 to 4 minutes.
  3. Remove form the flame, cool and divide the stuffing into 4 equal portions and keep aside.

How to proceed


  1. Roll out a portion of the dough into a circle of 4” diameter.
  2. Place a portion of the stuffing at the centre and bring the edges together at the centre to seal tightly.
  3. Roll out again into a circle of 6” diameter, using little whole wheat flour.
  4. Heat a tava and cook each paratha, using little butter, till golden brown spots appear on both the sides.
  5. Repeat the same steps to make 3 more parathas.
  6. Serve hot with curds and salad.
